The helicopter is moving with the Earth (and air, ...) as the Earth rotates on its axis. Just because the helicopter is no longer physically connected with the Earth does not mean that it longer moves with the Earth since its momentum is conserved.
Its momentum while still located on the surface of the spinning Earth was some initial value. When the Helicopter lifts up off the ground, by the law of conservation of momentum, it still has that same value. However, if you want to be very technical, now that it is at a farther distance away from the center of the Earth, it is traveling just a wee bit slower than it should be in order to stay perfectly above its original position on the ground. However, this difference in its speed of so small, it is easily negligible and is soon overcome by frictional forces.

The planet rotates approximately 15 degrees every hour. If you think about a helicopter hovering, it is usually only for a few minutes. So let's say the helicopter hovers for 5 minutes, then the earth has rotated a total of 1.25 degrees, in that period of time. To calculate the distance the ground covered in that period of time, you take the number of degrees, multiply it by the diameter of the earth (approx 7928 miles), mulitply it by pi, and divide it by 360 degrees. So, the amount of ground changed in that period of time is: approximately 86.48 feet. The difference is that a helicopter is not stable above the earth. It is acted upon by winds, gravity, the pilot's control. So in any momentary hovering the planet moves at such a small incriment, and the helicopter cannot stay stable, so the earth does not rotate away from it.

The helicopter is moving along with the earth so you don't notice linear motion difference. However you will over time notice a change in orientation, but the effect is unlikely to be very noticeable to the helicopter since the earth rotates so slowly ( one rotation per day) This is actually what happens with a Foucault Pendulum.

Because everything, including the air it is hovering in, is moving along with the Earth's rotation.

The helecopter is still so close to the earth that it is within the earth's atmosphere and even more importantly, still subject to the earth's gravitational field. This is also why satellites can stay over one spot of the earth.

gravity still plays a role, even though the helicopter is flying, it's still in earth's gravitational field. everything in our atmosphere is moving with the earth, even the air.
