Because that is the color of the National Team, called "Azzurri".
That is an historical tradition: before the creation of the Italian Republic, the Italian Regal Family (Savoia) had color "azzurro" (kind of blue) in their flag and that color was adopted by the soccer National Team to respect the Regal tradition.
Since then the color has been kept in the Italian shirt, even though it is not a color present in their National flag.

Italy plays in blue shirts rather than the colours of its national flag in a custom dating back to the country's pre-republican days. Blue was the official colour of the Royal House of Savoy and the Azzurri tribute to the Italian monarchy survives today.

It's the same colour used in for all other Italian National Athletic teams.
I believe it has to do with matching the colour of the Mediterranean Sea.
