You can have internships in these orgs:

United Nations (2month internships, not paid)
EU institutions (e.g. http://ec.europa.eu/stages/index_en.htm)
WTO (http://www.wto.org/english/thewto_e/vacan_e/intern_e.htm)

In the US, most states offer legislative internships during session. Most also offer stipends that cover living expenses. I took an internship, then worked for the program later because I liked it so much. On top of all of the hands-on experience you'll get (I know lots of interns who've even written bills that are now current law), it's a huge boost to your resume. Whether you want to work in D.C., go to law school, or even do things outside the political realm, state government experience and letters of rec. from Legislators will give you a huge advantage. And there's always international relations issues to focus on - even at the state level.

If you're near DC, you have the most opportunities for an internship. Otherwise check with your local politicians or the media. Journalists often have a political science background and a newspaper or tv station is a great place to intern.

It depends on where you live. If you live near Washington D.C. (or are willing to reside in that area), there are endless amounts of internship possibilities. Most state capitals will have lots of opportunities as well.

Elected officials, government agencies, think tanks, interest groups and law firms all offer internship opportunities. Don't be shy about asking about internships, as most places will be happy for the help.

Check out your local office holders - U.S. Congresspeople, council members, assembly members - all usually have local offices that hire interns during different seasons. Good luck!
