I would guess that he eats purple people. That is why there are no longer purple people around, because they were all eaten. When the purple people were all eaten, the flying one eyed purple people eaters had nothing to eat and they all died off and became extinct which is why you also no longer see any of them.

I believe the one eyed flying purple people eater is blind so he never knows what color a person is.He just eats indiscriminately.He is Purple.
