Scalping was going on well before Europeans got to North America - so it wasn't the British or the French who "taught" anyone to do it, though this is a frequently stated notion, primarily by those people who insist on painting the Native Americans as having been essentially a lot of peace-loving hippie types prior to European contact. This is nonsensical - the Native Americans weren't barbarians but they weren't perfect idealized peace-loving nature-intuned people either - they were ordinary people living ordinary (for them) lives.
The British and the French encouraged the practice because it was a handy way to keep track of casualties. And some settlers of European origin adopted the practice themselves.

That would be the French. They started doing it to the Natives, because there was a per scalp bounty. Then the Natives started doing it back.
