If an opponent in scrabble spells multiple words in one move and I challenge their spelling, do I have to challenge a specific word or do I get to challenge all the words laid down on that play?

You can challenge just one of the words - not all of them. Once that one word is not a "real" word, then they have to pick up the letters that formed that word...in turn, they are not able to complete the other words in that same chain. Hope this helps! You can challenge all of them too if you think they are all spelled incorrectly.

10.10 You may challenge only once in a turn, but that challenge may include one or more words, as you wish. Words challenged together receive a single decision: if all words challenged are acceptable, the move is allowed; if at least one word challenged is not acceptable, the move is disallowed.

You can only challenge one word, if you attempt to challenge more than one on the same challenge, your official Scrabble dictionary will instantly explode in your hands and blow off your arms.

I believe you can challenge each word a person makes in a turn.
