It is German .... spelling is actually "gesundheit", and translated means approximately "good health". Similar to "bless you".

Correct spelling above, origin German and means "God Bless You" said after a person sneezes as according to legend, you are closest to death when you sneeze, so someone near you that hears you sneeze says God Bless You or Bless You to make sure you are going to the right place in case you die during your sneeze!
