Looking on Google Earth at Oklahoma I see lots of circles in square fields. What are they?

It's just patterns created by the irrigation equipment.

Crop circles, people? Sure hope yer kidding...

Sprinklers. In the dry, flat regions, farmers tend to water their crops with a motorized sprinkler (a very long one). The water comes up the middle and the sprinkler rotates around it.

This is called center pivot irrigation. A picture of the sprinkler is about halfway down the page of the wikipedia article I referenced.

Probably cultivated that way...

You can see this in OK, KS, TX, and in cultivated parts of the Desert Southwest...other places too, I'm sure.

Some farms use a very long, rolling irrigation apparatus that pivots around one end, thus watering in a circular fashion. You're probably seeing the results of this type of farming.
