spying or spyware?
If you mean spyware, I strongly suggest PestPatrol. Norton is horrible. It misses almost everything. Pest Patrol catches about 800 things to every 1 or 2 Norton catches.
If you do mean spying, I might suggest a keylogger. Any keylogger will do. You can use software or hardware. One of my favorites is this one that you plug inbetween the keyboard and the computer. It stores everything on it, which you can later look at.

Well there are a load of Spy Programs, but they never work completely. I suggest you to go to http://www.securityfocus.com It's a complete guide to Vulnerabilities in a windows system, to gaining access to other computers and other sutff related.
I am still doubtfull about the integrity of the Spy Softwares, as they itself allow your computer to be spied. So think twice before you want to use it.
