Its got to be curling! I mean I cant imagine the years of concentration and training it takes to be the best curler. Wow, I have so much respect for those atheletes.

First of all, to be the best in any sport is one of the hardest things. If a sport is "easy" than there are tons of people there that are really good, and therefore it would still be hard to be number 1.
I think the Olympic "sport" (or challenge as I would call it, and I love track) that requires the most dedication and work would be the decathlon (heptathlon for women). You need to be amazing at 10 (7) different events. Yes it's true that most of the decathletes wouldn't be the top in any one event, but to train not only for jumping, but throwing is a very hard thing to do. One thing that you will notice (if you have participated in several sports, as I have) is that when changing between things that are so drastic (even though you were fit for the previous sport) you are not in the peak shape for the new sport. This is one of the problems when College athletes like to compete in both football and basketball, or basketball and track.
Well, in the decathlon you are dealing with several (10 or 7) events where some of them are not very closely related, but the athletes still need to be in the peak condition for all of those events.
Now, the most challenging sports event (non Olympic) IMO is the Ironman triathlon.
First of all, the athletes start off with a 2.4 mile swim. This may not seem like much, but go to your local pool and do 10 laps (there and back) in a row. Most local pools are about 30 yard lanes (some are Olympic at 50 meters). Therefore after 10 laps, you would have done only 600 yards (or about 1/3 of a mile). If you thought that was easy, continue, I'm pretty sure you won't make the 2.4 mile swim without being exhausted.
Next, you get on a bike and do a pleasant 112 mile bike ride. This is equivalent to some of the longer stages of the Tour de France. Again, if you think this is easy, go out and try it, it takes the riders in the Tour de France about 4 hrs to complete this.
After you finish the insane bike ride, you still have a marathon ahead of you to run. That's right, a lovely 26.2 mile run. I think you all can imagine how bad that is, if not, then go try it.
And don't forget, you get to do all these things, one after another, in the same day. Luckily they pick a nice cool day in the Hawaiian summer for the race. People have passed out just meters before the finish (one time it was someone who had a good lead, and then lost because they couldn't go about 15 meters more). I don't believe there is anything more grueling than this. Not even hockey.

That's an extremely subjective question, and as such you're likely to get a slew of difference opinions.
Hardest? Well, curling & hockey? Sorry I don't see that...Yes, Hockey is hard, but the fact that it's played by 10s of thousands leads me to believe it ain't TOO hard. And Curling? Well, it's hard to understand, I'll give you that...
Frankly, I think the "hardest" sports would be (in no specific order):
Beach Volleyball
Diving
Track (Decathalon & Marathon)
Gymnastics
Rowing
Water Polo
Weightlifting
Wrestling
Cross Country Skiing
Alpine Skiing
Figure Skating
Each of these sports can be amazingly demanding either because of the technique or endurance required, or both.

Personally, I think it would be gymnastics. There are so many really hard sports though that it truly is subjective. Each sport takes different talents and hard work and dedication. It depends on what specifics you are looking for.

I would have to say freestyle skiing because you perform a trick, but in order to get points, you have to land them correctly or you get deducted. I think that the second hardest would be slolim skiing because you could fall or miss a gate and get disqualified for that error.

I don't think any of them are easy! I would go for the high hurdles as the hardest.
