I took a girl I saw for a month to small claims court. She didn't show up so I won by default and she did not appeal it. They said I'd need to know either where she worked, where she banked or what property she owned to start garnishment. She was fired from the job she had when I knew her and we never discussed banking or owning property nor do we have any mutual friends. How do I go about finding these out without hiring someone or breaking any laws like stalking?

If you know her physical address...serve her with a "Summons to answer interrogatories." This is a court document to get her into court & answer questions you may have to file for a garnishment. Where she works, where she banks etc.

Following her once to find out where she works is not stalking so go for it
