Well, they make such gains and losses in a short time because that is their job. All Jackman was doing in prep for Xmen was working out 6-8 hours a day. Same goes for any of those pumping up or losing baby weight.

Come on Hugh Jackman is Wolverine though Logans supposed to be 5'3 and Hughs 6'3 i dont think anyone cared but seriosuly i think he did a great job and i cant see anyone else taking the role and being as good as he was.
