The Guinness Book of World Records had the oldest documented at 51. The horse's name is/was Badger and on 29 January, 2004 the grey Arab-Welsh cross horse was 51.

I just checked with Veteran Horse Welfare, Badger died on 30 June 2004. Found a link to the news article.

Copper was the oldest after Badger died, but can't find an article on him newer that 2004 and that was 2 years ago. Will see what I can dig up.

See below.
Veterinary medicine intern Nathan Earl leads Copper, a 51-year-old mixed-Morgan gelding, outdoors for fresh air Friday at the University of Missouri-Columbia College of Veterinary Medicine.
The 51-year-old Copper is the oldest horse in the United States, according to one source. And after last week's reported death of a 51-year-old equine overseas, Copper might now be the world's oldest horse on record.

According to the BBC, there was a 51-year old horse LIVING in Wales in 2004. I don't know if the horse is still alive, but it would have to be the oldest horse ever.

I'm not sure, but my friend has a horse that's about 45, and she's really old. She's been in all sorts of newspapers and stuff because of her age, and all of her teeth have fell out. They have to cook her carrots to eat like baby food.
