If you are planning on butchering cattle yourself I would not reccomend using written or picture instructions to do so. The easiest thing to would to send your cattle to a inspected butcher that can butcher the cattle for you. The carcasses can get very heavy and just handling the cattle had be tricky. If you decide to do it yourself your best bet would be to have someone who has butchered before help you.
If you are just looking for photos for another reason I would do a search for beef butcher, cattle butcher, or butchering on yahoo under image search.
