I just had my '98 Honda Accord's engine replaced. Soon after the check engine light was back on and the car started to buck forward after idling- as if the gas wouldn't catch when the pedal was pressed. I took it back to the mechanic and he said the gasket had a leak which he would fix for free but that the oxygen sensor failed and I would have to pay. Does the sensor have anything to do with the gasket leak? And would either of these make the car buck strangely?

If the gasket is a manifold gasket, then yes- it can cause the oxygen sensor to bring a false reading. Ask if it is an exhaust manifold gasket, and if it is, tell him to replace the gasket and reset the computer. Then try to run the car, and see if there is still a bad reading on the oxygen sensor. If it is just an exhaust manifold gasket, the oxygen sensor should test out just fine after it is replaced.

Sounds like you may have a bad MAP sensor. How many miles? Maybe a bad fuel filter. Could be several things wrong with it. Hard to tell with limited information, but I wouldn't bank on a bad gasket. Cars made after the 80's really didn't have too much gasket trouble other than just the head gaskets. The mechanic surely wouldn't replace that for free.

Oxygen sensor is just that - it detects oxygen in the engine. If there's a head-gasket leak, then yes it could. More than likely the fuel lines were removed or replaced which triggered the O2 sensor to go off. Getting O2 in your tank will ruin the combustion pressure....think of a pop bottle - if you shake it with a hole in it, the pop will not spray out as much (or at all depending on the size of the hole) when the cap is released.
