i've heard that in the old ancient china, male servants must be neutered before they're allow to serve the king and the members of his family. what kind of procedures have they done for the male servants - have their penis removed or the testicles?

Yes. These male servants are eunechs and are ordered to have their whole penis removed, not just the testicles. It was done so that eunechs, because they were so close to the emperor, could not become sexually involved with the emperor's concubines and it was a way to show their subservience.
