How can I cook a variety of types of squash?

Below are some links to websites that have a wide variety of recipes for all types of squash, winter and summer.
You can also make a delicious Baba Ganoush substituting winter squash (acorn or butternut) for the traditional eggplant. Here is a link with a recipe for baba ganoush using eggplant:

To make it with squash, you might have to bake the squash a little longer until the insides are soft and mashable, but other than that, just substitute it for the eggplant.

Title: Microwave Spaghetti Squash
Categories:
Yield: 6 Servings

1 Spaghetti squash (1 1/2lb.)
1 md Red pepper; thinly sliced
1 sm Onion;; thinly sliced
2 Cloves garlic; minced
1 tb Olive oil
1 md Tomato; chopped
1 md Zucchini; thinly sliced
1 c Sliced mushrooms
1 tb Tarragon vinegar
1 ts Dried tarragon
1/2 ts Salt
1/4 ts Pepper

Pierce squash with a fork in several places. Cook
on high 6 minutes per pound, or until squash is
soft; set aside to cool. When cool, remove seeds
and scoop out pulp.

Mix sweet red pepper, onion, garlic and olive oil.
Cook on high until slightly soft, about 2 minutes.
Stir in zucchini, mushrooms, vinegar, tarragon,
salt and pepper. Cover and cook on high about 3
minutes until crisp-tender. Toss with squash and
serve.

Makes 6 to 8 servings.

Squash stew,

A little butter in a skillet,
one whole medium yellow onion,diced medium
Three medium celery stalks, diced small
one tomato sliced.
two whole garlic cloves
one fresh corn OFF the cob
one teaspoon fresh basil
three-four medium sliced yellow or green squash
one 15 oz. can of ital. stewed tomato's
salt/pepper/teaspoon chicken base

sauteed the onions,celery, garlic,tomato's in med-high heat with the butter till they become crystallized
add the basil,squash,stewed toms,corn,salt/pepper,and chic. base.
cover with lid and reduce hear to low for about 30 minutes.
Do not add water, the steam will drop into stew if covered.

Served with oven baked chicken, white rice,garlic roll

Set table and call me.

Slice the small yellow squash or zucchini in quarter inch slices and saute with sliced onions for a delicious side dish.

I like squash casserole. Slice it and boil it for a few minutes. Mix it in a casserole dish with some mayonnaise, salt and pepper. Top with shredded cheese and crushed and buttered Ritz crumbs. It removes any possible nutritional value, but it's nummy.

Let's see, this is probably one of my favorites, not the healthiest, but still very tasty. I like to slice my yellow squash not too thin, not too thick, with chopped onions and fry it all together until brown. It is pretty yummy.

i like to slice it really thin & saute it (with a little butter & season salt) and add it on my fajitas!
