There are many theories concerning this. Warfare, famine, and collapse of the ruling elite have all been put forth. Jared Diamond puts forth a good possibility in his book "Collapse". he speculates that without written history to guide them, the Maya expanded their agriculture into drought sensitive regions in the lower plains, which collapsed their agriculture the next time A 500 year drought returned.
Still, it is possible that not enough evidence survives to tell.

It was mainly due to constant climatic catastrophies and warfare between itself and neighboring kingdoms... They are located in hurricane alley. Their agriculture could not sustain the unpredictability of the weather like the other parts of the continent. Many may have died of starvation. They were also wiped out and/or assimilated to other kingdoms before the Spaniards moved in.

Alot of reasons could be said for the collapse of the Maya Empire...the one city that seems to be able to tell us something is Coplan....archeaologists have said that it could have been agricultural reasons...political...alot of things could be attributed for this...and we should learn from this
