I would recommend the following...
Jerusalem
Yad Vashem (Holocaust museum)
Netanya (great beaches)
A few archaeological excavations
THere should be several websites which can give you more suggestions.
If you like folkdancing, you can dance every night in Israel, and they also go to the beach afterwards for a BBQ. I have heard this is a lot of fun, and they stay up very late.

You must go to the old city of Jerusalem all the vendors and everything is amazing. Caesarea Maritima and Caesarea Phillipi are very nice. En Gedi and the Dead sea in the south along with Masada are amazing places to visit.
There are quite a few interesting things to see at Kibbutzes around the country. There is a crocodile farm (im sorry I forget where exactly it is) that has the most I've ever seen anywhere.

In Tel-Aviv: you have to go to Neve Zedek (small streets, artistic)
And on friday, at sunset, go to the dolphinarium beach.
Zichron Yaakov is beautiful.
Eilat if you like to dive.
