you're off to a good start, though i'd argue full metal jacket was weighed down by the second half of the film (interesting that you have two kubrick films there).
if i had to pick one i'd say "iron giant, a brilliant animated feature by brad bird, who later went on to direct the incredibles from pixar. think it's easy to overlook animation as a quality film but this was a great movie regardless of genre.
also think "my left foot" was somewhat overlooked as a great film despite the recognition for daniel day lewis.
lastly would add "trainspotting", in which ewan mcgregor gave one of the great acting performances of the last ten years in my opinion (actually thought he was a real heroin user and not an actor).

I don't think this film is the most underrated film of all time, but it definitely makes the list. "Vanilla Sky" was incredibly well made, introspective, tragic, and deep. It was a love story compounded by the journey everyone takes to understand themselves. It was also a story regarding beauty and what it means to be, or not be, beautiful on the outside.

Your first two are great movies, but I wasn't impressed with Eyes Wide Shut. I watched it twice, but other than some great cinematography and camera work - eh?
I thought Sleepers and The Shawshank Redemption were great - they're well thought of now, but no one saw them when they came out.
I thought Titanic and Forrest Gump were the most OVER rated films.

The critics all blasted it because the book was written by L. Ron Hubbard and noted Scientologist John Travolta starred in it, but if you ignore all the political and religious BS and just watch the movie, it's really a wonderfull piece of 'space opera' style science fiction.

I thought Dune really brought Frank Herbert's vision to life (the more recent adaptation was just too weird).. the movie has great actors, a lot of style (thanks to Lynch, who is also underrated!).
