I've noticed dogs I've owned in the past sometimes roll around in the grass and I've noticed cats do the same. Usually they do it in stuff that smells good to them.

paintingj had it right. They are trying to mask their own scent. it is an instinct thing. Large animals, wolves and big cats, try to mask their own scent so they are more inconspicuous and can sneak up on their prey more easily before initiating the attack. For example, if they smell like a wolf, they will alert the elk they are hunting, but if they roll in elk poop, they simply smell like elk poop which an elk would not be concerned about.

Well grass doesn't smell entirely that good to me but, Animal behaviorists think it is a way to "scent camouflage" themselves. By rolling in something smelly and perhaps of their intended prey, they won't be detected. I have a "roller" dog, and she just looks like she loves the thrill of new Eau de Dog perfume!

Sometimes they're just scratching. but mostly it's an inate form of predatory behavior. Shortly if a cat wants to catch a rabbit it's a lot easier if it doesn't smell like a cat.

They used to be wild animals so that's an instinct I guess. Like how they walk around on their bed in circles before they go to sleep. When they were in the wild they would walk in circles around a pile of leaves to smoothen them out, so all I'm saying is It's most likely an instinct.

They are either trying to get their sent on the grass, or the grass's scent on them. Or maybe thier back is just itchy.

they roll in stuff because, well there are a couple reasons why
1. they could like the fealing of whatever they are rolling in , kindof like a thing to scratch there bodies on.
2. just like pigs, if they are to hot outside they could roll around in a nice mud bath!!
.... and thats my reasons for your question.

Its all about marking a territory. Putting other scents on themselves or putting their scent on the grass

To mask their own smell with the smell of something else.

They do it because it feels good to them. It gets all those spots that they can't reach with teeth or claws. Sometimes it's because they are excited and sometimes its for an itch. That's about it.
