I've recently completed an interdimensional probe, and am ready to send it into another dimension. If there are sentients on the other side, I'd like to contact them. What language should I use? What's a universal language that can be understood by every sapient creature in the universe?

Wouldn't it be wonderful if there were a language that could be understood by "every sapient creature everywhere?" There's not even a language that can be understood by all of us humans on this little planet. Whatever you send, you alien friends are going to have to work very hard to understand it.

I'd send some well-illustrated grade-school level science and mathematics textbooks, some more advanced textbooks, a dictionary, some picture books, a grammar reference, and a book on human psychology. And, of course, the message you want them to understand.

There are 2 choices; Math, because the laws of physics (expressed mathmatically) and numbers remain constant wherever you may be. 2+2=4 makes sense here, it makes sense in Alpha Centauri.

The other, more romantic choice, would be music (which many believe to be related to math on a notational level). All beings that we know of so far (those on Earth) that have some kind of higher brain functions, whether sentient or not, respond to music on some level, even if it is just rhythmic.

You wish to send it across dimensions not across universes. To clarify the universe has eleven dimensions according to String Theory .. The Grand theory promising Unification .. (proven mathematically but yet to be proved practically)
Proper reciepents of your information would reside in four dimensions only other dim are two miniscule for even elementary particles to exist leave aside any form of life
Only EM waves and hydrogen is universally existing everywhere so the info should be coded in some waves whose energy corresponds to excitation level of hydrogen.
It must be charactersized by regular patterns to make it distinct from random waves. The patterns should be repeated.
if it would still be understood would depend upon the intellgience of reciever. eg Even dogs have some intelligence and most species communicate with each other but only humans are capable of extracting ET info.

Some say math, but I've found that using pictures and gestures can be very effective when communicating with those that do not understand your language. Just be prepared to be very patient.

Drawings, pictures, sketches. A mathematical equation doesn't mean sh!t to someone/something that is familiar with numerical notation.
