Can anyone tell me the significance of the colour changes (clothes etc) in the various "flashbacks" in this movie?

I don't think particular colours meant particular things, it's just a clever technique to hold each version together and help the viewer differentiate between the stories. It also adds greatly to the breathtaking beauty of the film.
