Noise is created with the movement of particles. The popping noise is caused by the air particles inside the balloon very rapidly moving outside the balloon.

When air is traped in the baloon and is presurrised more and more then the the skin of the baloon looses its elasticity and rips off. The traped air inside releases suddenly from its compacted form and produces a loud noise. Which we say it explodes.

the sound is actually a miniature breaking of the sound barrier - i.e., the air inside the balloon is escaping faster than the speed of sound. It is literally a tiny sonic boom, just like the large ones you hear from airplanes sometimes.....

I think it is the air getting out of the ballon very fast.
