Food in banana leaf is not served always, only in special occasions and for guests.
Its more hygenic. It is somewhat like modern days paper plate, where you can use it only once and throw. You can just throw away the leaf after eating.
The other important thing is cleaniness. While worshiping God, the food is offered in banana leaf as it is fresh and also Indian feel that the food that is offered to the God should not be offered in an used plate.
There are many procedures in using this leaf.

Banana Tree, in India, is considered as sacred. We owe a lot to this tree and it is related to many Indian Gods and Goddesses. If food is put on top of banana leaves, it acquires a sacred touch - meaning tht we should be thankful for our food and not waste it. It comes to the same thing tht ppl of other religions say grace b4 eating their food.
Moreover, it has been found tht eating out of a banana leaf is more hygenic as compared to steel, platic, paper plates and cutlery.
