I do not want to sound completely stupid when somebody asks me "How are you doing today?" Do I say "I am doing well." Or do I say "I am doing good." (contingent that my state of mind at the time of the question is positive aka happiness)

Good is an adjective. It tells what something or someone is like. Generally it is used before a noun or after a linking verb.

Examples: That was a good game.
Harry is good at math.

Well is generally used as an adverb. It tells how seomthing is done. It is generally used after an action verb.

Example: Harry does Math well.

Note that well may also be used as an adjective meaning "in good health."

Example: I don't feel well today.

As to your question, "doing" is an action verb, so you should use "well." "I am doing well today."

Both of these reflect that the state of mind is happy
But in spoken English , sometimes we dont feel comfortable with words
Good or well?Its not about what is right , both are
But Its about what makes you feel at ease , and looks much proper .

In the form you are asking about, "good and "well" are serving as adjectives (more formally, they are subjective complements as they describe the subject)....in its adjective form, "well" means "healthy"...so, the correct sentence would be "I am good."...unless of course the other person is asking about your health (maybe you have been sick)...then you would use "I am well."

You use 'good' to describe nouns (I am in a good mood).
You use 'well' to describe verbs (I am doing well).
