I am about to buy a 1972 Honda 350 that's been modified to a cafe racer style bike using an elongated gas tank made of epoxy. I am wondering if this is safe, and if it is problematic in any way.

It is not problematic, simply because the epoxy is made for gas tanks or any toxic materials.
