Sorry, I have not seen any Chinese working at Mexican restaurants. But plenty Mexican works at Chinese restaurant. What is big deal? Everyone makes a living.

They're not all Chinese, but Asians, and not Mexicans, but Hispanics. First of all, it's only a job. And some Hispanics may be more qualified for the job at a Chinese restaurant, and Asians may be more qualified than Hispanics at a Mexican restaurant. They might like the other race's food more than their own and own a franchise. Otherwise, people may just be waiting for a job opening a the restaurant that matches their race.
