Bettas will eat flakes if they are use to eating them. My female bettas happily eat both flakes, and pellets with the rest of my fish in my main tank. My male bettas use to eat betta flakes, and still do if they are hungry. That said there really isn't any reason to use flakes over floating pellets. Flakes are okay as long as the main ingredient is fish/worms/insects. If you really want to switch to flakes try not feeding him for a day or 2 then throw in the flakes. Be aware that bettas are pick eaters if you let them. I know people with bettas that only eat brine shrimp, or blood worms.

I think that your fish is just being fussy... mine is the EXACT same way. He loves the betta pellets, but he WILL NOT eat the flakes. I think it's just preference. The fish got used to the pellets, so that is what they like. Changing it now, probably won't work. It didn't for me anyway. I have a container of flakes, that are never going to get eaten. (I have 6 betta fish, and NONE of them like the flakes. All of them got used to the pellets, so that is what they want.)

Mine won't eat either the flakes or the Betta Bites. He will only eat the dried bloodworms. He loves those though and it's kind of fun to watch him eat those.

Some fish prefer different things. My goldfish won't eat the flake food so i don't feed it to them.

They take time to get used to new food. If you feed only flakes for a few days then he will start eating it.. Don't forget to remove uneaten food!

Bettas tend to either like one or the other, pellets or flakes. The best food you can feed him would be Hikari pellets, since he seems to like those.

I always bought "the sea monkeys" (also called brine shrimp) from the pet store for mine. They eat about 20 per feeding (twice a day) and it doesn't get the water as dirty...
Each of the 3 I had lived for approximately 3 years.

Flakes are much dirtier anyways - so it's better that he likes the pellet.
They can be picky at what they eat.
If you want to give him a treat, give him dried or frozen bloodworms occasionally.
