I am visiting a friend in Panama in September and will probably spend a little time in Columbia on the way - the airline stops in Bogota.

Italians don't need a visa to enter Panama. You will enjoy your visit, Panama is a beautiful country.
If you stop in Bogota on your way to Panama, expect to be very well searched and interviewed by immigration officials when you try to enter Panama. You will fit the description of a typical "mule" carrying drugs out of Colombia. Dozens of unsuspecting - or otherwise - Europeans are caught in Panama trying to smuggle drugs after a short stay in Colombia, Some claim that their "friends" planted the drug in their bags without their approval.
You may consider visiting Colombia on your way back.

You don't need a visa in order to visit Panama. You will only have to buy a tourist card from the airline, or you can do so at your arrival at the airport. That will give you 90 days to stay in Panama as a tourist.

If you already bought you airline ticket well, go ahead and make your stop over in Bogota. Contrary to popular opinion Bogota is a very nice city. I lived there for about 1 year and it was a nice place to be. I do recommend that if you don't know anyone in Bogota to show you around, it's better to stay in a hotel, or take a guided tour from a hotel approved guide or tour agency.

If you haven't bought your plane ticket then consider flying direct from Madrid to Panama City, as Iberia has a direct flight.

you will need to check this out with consulate tourist section as the rules differ for every citizen.
also you need to have proper documents etc:)
