I see scorelines of like 0:2, where one team wins two nil over the other. But then they have numbers in parens afterwards, like (0:1). What do these numbers mean?

It means that one goal was scored in the fist half of the game.

Better example is:

Team A vs. Team B 3:2 (1:2) <-- means the game ended with the victory of Team A for 3 goals, while Team B scored 2 goals. The first half of the game ended with Team B winning with the score of 2 -1.
