Stafford, Texas? Don't apply as assistant to Tom Delay, he just moved to Virginia, otherwise almost any small business that is well thought out could succeed. Real estate and construction and related businesses are very active. If you have a good use for a sugar refinery next door (only used once, for 100 years or so) you should do well.

My guess would be health food. Was visiting my brother in England last fall and was horrified by what the English people were eating and by the high amount of heart disease there. It seemed like everyone always ate hamburgers that were dripping with grease or pre-packaged foods you pop in the oven. All were extremely unhealthy. I think England is more than ready for a health boost!
