jodie her kids aren't really starving she just ment that that's what they complain about b/c they haven't eaten anything since lunch that day. My suggestion would be to send the kids with a snack or 2 to help with them being "starved" and then as for quick and easy meals if you watch Rachel Ray on the food network she has GREAT ideas and she makes all of her meals in less then 30 minutes. I do believe she has a cookbook out, might invest in that. I personally grew up with hamburger helper and think it's gross so if you get the cook book it's all healthy, all good food for you and the kids, and it's really quick and easy to make.

Awesome question and I'm definitely going to use some of the recipes you got as answers. I have a great no-boil ziti recipe that the kids love. It only takes 5 minutes to throw the ingredients together and an hour to bake. I know this won't help you for workdays when you need to eat immediately (unless there is someone who could throw it in the oven for you at 5:30 or if your oven has a delayed-start feature) but it could be great for busy weekends.
Prep Time: 5 minutes
Bake Time: 60 minutes
Serves: 8
1 26 oz jar pasta sauce
1 1/2 cups water
15 oz ricotta
1/4 cup grated parmesan
2 cups shredded mozzerella
8 oz uncooked ziti
Preheat oven to 400 F.
Combine sauce and water.
Stir in ricotta, parmesan, and 1 cup mozzerella.
Add uncooked ziti.
Spoon ziti mixture into 13x9" baking dish.
Cover with foil and bake 55 minutes.
Remove foil and sprinkle with remaining mozzerella.
Bake uncovered for 5 minutes.

There is a great way to have several nice chicken dishes and they use one pan.Buy youself some chicken cuts or breast or whatever and there are a few simple sauces that you cook in the same pan as the chook after you have cooked the chook.here is one of them. Get a non stick fry pan throw in a dash of olive oil and brown the chook,take the chook out of the pan and put in the oven on a low heat.you should have a fair bit of pan drippings left in the pan to this add a jar of medium salsa and one third cup of water and simmer until reduced by half.pour over chook and garnish with sliced avocado and sour cream serve with a green salad.Looks great tastes great and BF has one pan to wash.Hope this helps.

2. Mexican Lasagna: layer flour tortillas, cooked pieces of chicken, green chiles, sour cream, and shredded cheese, in a round glass casserole. Covered on 350 for 30 minutes, then uncovered for 30 minutes. You can add more veggies if you desire.

One way to save time is to prepare the meat the night before. Defrost it, cut off the fat, marinade it, and stick it in a pan in the fridge. When you get home, pop it in the oven until it's done. Get the kids (if old enough) to help with the side dishes, so they are occupied for the 15-20 minutes the meat is cooking. (All the better if you have one of those new-fangled oven/fridges where you can set timers or call it on your cell phone to turn it on.... crazy!)
Crock pot meals are nice too!! Cut up some chicken pieces the night before and stick in fridge with a little EVOO so they don't dry out. Pu them in the crock pot with water (or broth,) chopped carrots, onions, potatoes, etc. Should be done when you get home.

Tacos are also a good idea. Just prepare the meat the night before, and stick it in tupperware. Chop your tomatoes, lettuce, etc. and stick that all into tupperware too. When you get home, microwave the meat and you're ready to go, buffet style.
Assemble a lasagna the night before- wrap and stick it in fridge. Put it in the oven when you get home long enough to heat it up and melt the cheese. You could even get the "no-boil" noodles and all you'll have to cook is the meat, (if you want meat.)
Chili can also be put in a slow cooker on simmer.
They sell iced-glazed chicken pieces for frying: breasts, tenderloins, thighs, etc. There's no need to defrost them- you can stick them right in the frying pan with some butter or oil and cook them right away. Throw in some frozen veges and you've got a stir-fry, or use them however you want.
Sometimes we'll have chicken salad for dinner. You can either use hot chicken (frying up the iced glazed chicken) or cold chicken- fry it up the night before and refridgerate. Buy grape tomoatoes (or chop up some and refridgerate), use pre-shredded cheese, bacos, or whatever you want on your salads. You can either buy salad mixes in the bags, or just chop the lettuce yourself.

I raised two kids. We had regular meal, leftover and what I called concoction night! Those were the best: Scallop potatoes, hot dogs and green beans (all the basics).
Another was ground hamburg, mixed with scrambled eggs and rice!
My daughter called recently, very proud of herself, cause she created a concoction - I told her that was great.
Hey use what you got - you may come up with something great!
Oh, hears a family pass down: Shepard's pie: ground, seasoned hamburg, mashed potatoes, two types of veggies (canned).
Layer the potatoes (use only 1/2, add one veggie put in middle meat (drained of course) add next veggie finish with layer of potatoes. May add cheese to top.
I always like to use ketsup on mine afterward.

Make a stew, get heaps of veges and some stewing steak, chop it all up, some Salt and pepper, some garlic and put it in your crock pot and go to work. When you come home, you will have a beautiful healthy meal.
