What you see is the burning vapors and gasses because solids and liquids don't burn.The heat created in these burning gases causes the electrons in the carbon atoms to change heat energy into light energy.

Its a chemical chain reaction, producing energy as light and heat, and altering the chemical composition of the fuel.

To start the reaction, you need three things: heat, oxygen and fuel. To stop it, remove one or more of those ingredients.

It's a form of energy. It is heat and light. Nothing more, I am nor quite sure what we see though....
