I used to do mine 2 or 3 times - but I have a garden that requires a lot of attention, and don't have the energy any more, so I'm wondering if I can get by with just doing them once.

If you leave the shaw growths until they are 8 - 12 inches high, 'hilling' once should be enough.

Try 'surface'' growing - place the potato on the surface, cover with black polythene extending to about 8 - 10 inch each side.
Cut a slash in it where the potato is - new potatoes grow on the surface of the soil (it also keeps the weeding to a minimum !).

I only hill mine once unless we have a hard down pour than i check them and replace dirt as needed but otherwise i only hill them once and they come out just fine

The more you hill, the greater the yield. It is a trade off.
