Both XP and 2003 are based on NT technology. If XP is dedicated primarly to pc's, so a general use public, 2003 focuses on servers and mainframes! This is the main difference between them.
For example XP doesn't support multiple processors, while 2003 does. Xp supports maxim 4 Gb of RAM, while 2003 supports up to 16 Gb of RAM. The security issues are more advanced in 2003, since it's ment for servers as already mentioned.

the main differnece is xp is designed for a home user, and server is designed more for business use
