Use a 3-panel display board, and remember that color attracts the eye, and hand made attracts a higher grade. Make colorful graphs on stuff like the average rainfall per year. Include some weird laws in your state, such as "A PARENT CAN BE ARRESTED IF HIS CHILD CAN'T HOLD BACK A BURP IN A CHURCH SERVICE" that by the way was an actual law that I found on http://www.passapage.com/laws.html.

what about a jeapardy style game? if the teacher won't allow the students to play the game in class, either siblings or parents can serve as contestants, and you could get someone to film it. you don't have to have as many categories as the real jeapardy, just a few- enough for 2 short rounds and a final jeapardy round. all the questions could relate to the state of Nebraska.

Make a posterboard with info. on Nebraska (its capital, popular attractions, what number state it is, population, average weather, sports teams, etc.)
I did a project on Alaska last year (when i was in 5th grade and included stuff like that and i got an A+!!

You could make a book including facts and pictures all about Nebraska.
