To have a good overview of Bollywood, here are some films that I would recommend. Not all of them are great movies, but they will definitely give you an accurate overview.

Both of the above are old movies, from the 70s, I think.
Below are the newer movies of today's generation:
Kuch Kuch Hota Hai
Kabhi Khushi Kabhi Gham
Lagaan
Fanaa
Dilwale Dulhaniya Le Jayenge
All of the above depict the colorful Indian culture. Fanaa and Lagaan show the innovation of Hindi cinema.

Growing up I felt that Bollywood was a genre on its own because most of the films that were produced followed the same format, i.e. they have a similar plot with action, romance, comedy/anguish, and about 5 songs thrown in. But it's not like that anymore. These days Bollywood is breaking out into different kinds of films - just thought you should know that because it's a popular misconception.
My list:
Sholay (haven't seen it, but I hear it's pretty good)
Kabhi Kabhie
Dil
Darr
Diwale Dulhania Le Jayenge (longest running film hindi film at the box office)
Hum Aapke Hain Koun
Khamoshi (from the 90s)
Kuch Kuch Hota Hai
Dil Chahta Hai
Devdas (any version - they were all hits but for different reasons)
Lagaan

Most of the Bollywood films will give you an overview.
They all have the singing,dancing,and man meets girl type story line but there is Dhoom which I saw and really enjoyed it has everything in it. Gorgeous cast funky tunes and good footage of India.

I can tell you a few good and classic ones...that are my all time favourites.....some are new and some are not so new but they certainly gives you the best of bollywood.
