To create consistency in email communications, especially business related ones. It also increases email reliability between employees - as the system is internal, and very unlikely to get "lost" somewhere.
With Microsoft Exchange, all users emails are generally held on the Exchange server, which is normally backed up. Also, calendar functionality can be utilised so one employee can check another employees availabilty before sending a meeting request.
A global address book is set up on Microsoft Exchange, which means all users can easily select internal email addresses from it. Commonly used external emails can be set up as Contacts in the global address book.
Email addresses are also easier to set up and manage when onsite.

Less chance of documents being lost or mislaid
Can be sent to several people at the same time
Alerting staff - general notification of holidays etc.
Less likely to find post-it notes cluttering up your desk, computer screen etc:)
