She passes on all family and social functions if a Kabbalah event is taking place. How should I deal with this relationship. We're not married yet, but engaged. Should I just let her do what she feels she needs to do or book on out of the relationship?

Depends on the quality of the nookie and her money situation...

If she's a full-on freak in the bedroom and gives it to you every way you want, takes good oral care of the sausage, then thats a point in her favor. If she has good income another point.

If only one of those is true then it's a toss up. If both are not true than its dumpsville.

How long has she been into Kabbala? Sometimes people fall into a period in their lives when they become obsessive about something, but then it passes. Although her religion is important to her, it is probably unhealthy for her to miss out on family and social functions (and for life to pass her by). It might help if you sat down and had a discussion about how her religion is affecting you and the relationship. Let her know that you understand that it is important to her, but also that you feel as though she is neglecting you and everyone else. While it's important to praise God, it is also important to appreciate the wonderful things and people that He has blessed us with. If she is truely religious, she should come to understand that.

Does she miss any holidays that are important to you? Do you know that religion's ideas on children and child raising? Or what religion the kids would be raised as? Sometimes, its the details that'll get you. If the religion difference is already causing problems, it won't get better just because you marry. You need to think hard about marrying her. Because what she does now will continue (or get worse). Could you live like that with her for the rest of your life? If you have to stop and think about it, you don't need to be marrying.
