i grow cutflowers in NE Victoria and I am wonder whether to try Beehive gingers under cover, either plastic or shadecloth. I was hoping some people out there have had some success or a little knowledge about them.

Since Ginger is a warm climate tropical, it will definitely need winter protection in all other zones than 10 and south (4 or north for Australia).
I'm trying to figure out whether you live in Victoria, Canada, NE Victoria, Australia, or Victoria, Texas....lol I'm going to venture a guess that you are in Australia.
Plastic cover will heat up your growing area even more...though it will add humidity. Shadecloth will be a good idea, if you are in Australia.

"Light: It can grow in full sun to part shade locations.

Temperature: A minimum temperature of 68°F is required for the plant to grow well.

Humidity: The plant loves moisture. Keep in a humid area of the garden in moist soil. Needs high humidity

Watering: Keep surface of soil moist, but not soggy."

I am in Texas and have a variety of gingers. They all freeze easily.

Keep the roots wet during a freeze to protect them.
Lights can give off warmth and provide mood lighting as well.
