The closest to what I would pick would be SS Goku vs. Frieza, but in reality, I would say the entire Goku vs. Frieza battle. This was the longest single battle in DBZ, & really shows why Frieza is the best villain of the series. He was very malicious & sadistic. To survive someone's, at the time, ultimate attack, & then blow his best friend to atoms right in front of him is a perfect illustration of Frieza's evil. He didn't just try to beat a foe physically. He attempted to shatter them mentally & emotionally as well, so that when they finally met death, they welcomed it, being truly defeated in every sense of the word.

Goku VS Piccon in other world was good. Vegeta VS Android 19 was also. My favorite is Gotenks VS Super Buu.

i really like 3rd one, when super saiyan 3 goku fight kid buu... and when he throws the energy ball i liked the best. those are one of the longest fight with the toughest enemy of all. yeah! Goku ROX!
when mystic gohan vs super buu wwas also nice but i hate the way it ended by gohan got absorbed. (stupid)
in short, ALL the fights involving the fights with buu are the greatest bacause he performed the best, next to Cell. ^_^

goku vs Frieza, the whole battle, kao-ken and SS. that battle lasted the longest and was just plain great. the next best one would be SS2 goku vs. Majin Vegeta. I saw it on TV on adult swim, and immediately went to look for pre-order after the episode finished.
