Not just low coolant level will cause that. Now, if the reason the coolant is low is due to a cracked head, or a bad gasket, then the coolant could get into the cylinders causing the engine to mis-fire. A clogged fuel filter, or clogged nozzels in your injectors (if equipped) or clogged jets in your carburator (if equipped) will do the same thing, too. Possibly, the fuel pump is going bad. When was the last time you changed the spark plugs? How about checking the distributor, wires, cap rotor? (if equipped).

Low coolant can only cause the engine to sputter if it gets low enough to let the engine overheat , if the "Service Engine" light has come on then that usually means that it has logged a problem code in the ECM. Have the "Trouble Codes" pulled at a shop and it may tell you what is failing.

low engine coolant might cause spuddering. I would also keep an eye on your oil pressure.

Low coolant usually doesn't cause that. Take it to a mechanic and have them hook their diagnostic machine to your car. That will tell you exactly what the problem is. It may just be bad spark plugs/spark plug wires or clogged fuel injectors.

Light coming on uphill sometimes means low oil. That wouldn't make your car run poorly, though.
