"Light," reason, purity of perception etc metaphors go back a long long time. It's a preference of Logos over Eros. In a word it is 'cultural'.

I think it's because people often wait until cover of darkness to commit crimes. Also, I once heard a chief of police in Utah talk about his experiences in investigating crimes, and he said that it got so that when he arrived at the scene of a particularly nasty crime, he could feel AND see the darkness in the area, whether or not it was a night setting or even if the light was turned on. From a Mormon point of view (and really I expect any religious person might agree), the absence of light is associated with forces in opposition to God. I have also heard some people describe evil spirits as looking something like dark shadows (depending on what degree of detail they have seen.) I think even people in ancient history understood there are opposing forces in the world, and that is where the stereotype comes from.

Research indicates that crime happens more often at night. So I think it's safe to say if I hear a bump in the day, it's the cats messing around. If I hear a bump in the night it could be some evil thing comeing for my soul. I can't see as well. Or it could be my crazy neighbor that likes to stare at me. (very creepy) or it's somebody trying to break in. How and did we let ourselves get freaked out about the dark? Maybe it's a natural thing. Perhaps if people would take the time to take a look at the night sky, we would realize how beautiful and peaceful it is.

God is good at sharing, Evil is good at injustice. The opposite of God is not Evil, it is "not-sharing." The opposite of Evil is "injustice." God encompasses matter and concepts. Evil encompasses concepts only, and lacks matter.
Observing the first and utmost God's attribute of its matter, "light" seems to be the logical and universal choice. God said: "Let there be light!" And that's when he started "sharing" his light. Evil is superficial since it lacks "matter." God's light extends to eternity and as it shines outward it captures nothingness.
Could Evil exist in nothingness (God's to be had), if it has no place (matter) to exist on? Could Evil that is created by human's mind exist in nothingness? Could it be that if human eliminated the Evil in his mind, more estate would be added to the God's estate, and human light would help God's light penetrate even more into nothingness?
Perhaps that's why Evil is associated with darkness, it's the darkness in humans that springs from injustice.

One possible answer is that light is associated with the sun, which is what lets everything grow. An absence of light means nothing can grow which means death, which alot of people associate with evil.
Another possibility is that we can't see what may be sneaking up on us in the darkness, so we associate it with danger.
Also, traditionally, 'God said, "Let there be light", creating a tradition of divinity and light as one and the same.

I'm going off the top of my head here, but I think it has to do with feeling safer in the light of day, when we can see around us, than in the dark of night night, when a predator or a thief could come up without warning.

Darkness represents the things we can't see. Humans fear the unknown. Humans assume because we fear something that it must be evil, thus darkness has become the symbol of evil.
