I'd normally have a chippie after a night out (I'm Scottish) and just wondered what Americans would have.

And a chippie, by the way, is some sort of food (probably for me deep-fried sausage and chips) from a fish & chips shop.

It will depend on location of the country and age.
Older groups and couples will often land at a 24 hr coffee shop. Denny's and IHOP being the two largest chains in the country. Waffle House if in the southern part or one of the few northern locations.
Younger groups will often hit a fast food place if one is open in the area. McDondalds, Taco Bell or Burger King. These places are much cheaper!
As a rule no matter where you go or what age, people normally go for something with carbs. and if they are at a coffee shop many times it well normally be breakfast.
Pancakes, waffles, breakfast with hashbrowns, and sandwiches with fries (chips) are the top items.
As for me... I do IHOP and have a Cheese Blitz

Either pancakes or white castle hamburgers. Mainly because diners that sell pancakes are open all night. White Castle is open 24 hours a day. You will be paying for eating the White Castles the next morning though.

Usually people just go to nightclubs and party and dance, and have a few drinks there. I'm not old enough to attend nightclubs (I'm 17) but probably they go eat a burger or something.

Whatever is open--- Waffle House (or as we call it Awful Waffle) or McDonalds, Taco Bell, Jack in the Box etc.....
