Because they don't have a temple to sacrifice them in, anymore. The Temple of Solomon was destroyed by the Romans around the first century.

If you look closely at Leviticus, you will see that the sacrificial laws all involve taking the sacrifice to the Temple in Jerusalem.
When the Temple was destroyed, the location for the sacrifices was no longer available.
Also, the purpose of the sacrifice was the support of the priesthood and the community. It was the ODOR of the sacrifice that was "savory" to the L-rd. Unclean parts of the animal (blood, entrails) were consumed entirely by the fire. The actual meat was eaten. It was the ACT of making a sacrifice, not the sacrifice itself, that cleansed individuals.
Once the Temple was destroyed, the "sacrifices" continued, through mitzvah (good deeds not tied to personal gain...directed toward G-d and toward other people) and tzedakah (charity, a form of mitzvah). It is the ACT of giving up of one's own resources to G-d (time, financial, etc.) that brings cleansing.

Once the temple was destroyed we were unable to bring sacrifices anymore. Some types of sacrifices where made to ask for forgiveness, some where for thanks... After the temple was destroyed the "Anshei Kneses Hagedolah" put together the siddur - prayer book. Now we use prayers instead of the offerings since we dont have the temple to offer them in.
When the messiach will come, hopefully very soon, the 3rd and eternall temple will be built. Then we will once again be able to bring sacrifices to G-d!!

they are only supposed to do so at the temple (holy ground) - since they dont have a temple, they cannot sacrifice animals
