I ask them if they need help with something. If it is part of the way that you are evaluated, and it is necessary to your job, then I would talk it over with your boss.
Their is a surprising solution. I had a girl that I supervised with this problem. I worked in a call center and side-by side observation were part of our evaluation of employees. I knew the young lady was good at her job. It showed in her call statistics. So what I did was started sitting the new hires with her their first day out of training. I would have her explain what she was doing and why to them a few times then have them switch places and let her observe them take a few calls.
It made her more comfortable with the whole process and she didn't make as many mistakes when I sat with her after about 3 months.

You know, I have this very same problem when I am at work. My boss will come and stand over me when I am typing something on my computer. I asked him one time before why he does this, but all he said was to make sure I wasn't doing anything " illegal." But I don't care what his reason for doing it is, I find it is very creepy and disconcerting to have someone do that to me. The hairs on the back of my neck stand on end up, and I tense up like a statue. And like you, as soon as whoever does that to me is gone, I am fine. I don't know why this affects me as much as it does, but I would suggest you tell people who do it to you to stop, or at least ask them if they want something, and if they don't then tell them to remove themselves from around you so that you can get your work done. I have asked people not to do this to me, and they didn't look at me like I was weird or anything. I guess they have the same things happen to them sometimes too.. So what if they think you might be weird for telling them something as this? At least you will be comfortable in the end.

LOL i get this one all the time too....i will stop and ask if she needs something, if she says no...I calmly say that she is invading my personal space and making me uncomfortable. She knows that my work is great and that I don't need a supervisor! Oh yeah, then if that does not work. I will stop working and ask if she wants to do the stuff that I am working on that one is probably the most effective! And one more that I just thought of do it back, it will drive them nuts and maybe they will realize why you are so bothered by it!

Well I minimize all windows on my computer and then turn and ask the person if there's anything I can do to help them. Most often they get the point and back off, of course there are a few stubborn ones which I totally ignore.

I stand up from my desk and offer them the chair. When they start to bluster and say no, I point out that they must be awfully interested in my task so maybe we should switch jobs as I'd like to be able to be the one to stand there watching them work. They usually find something else to do.

i can not stand that either i dont even like standing in lines at the grocery store or at the bank i just dont like people behind me, i feel creeped out or something. i usually just stand to one side kind of side ways so no one is directly behind me. if im at work i just step out of the way and offer the person behind me to do it since they have such an obvious intrest in whatever it is i am doing. they usually go "oh sorry, just tryin to see how you were doin'"

Oh, when I was able to work, I hated that. I started just saying "Excuse me, I need to go to the ladies room", even if it took several times a day. If he kept coming back, "Excuse me again, I have a bad bathroom problem today!"

Tell the person that you do not perform well, nor do you enjoy working while being so closely scrutinized. That if they would like to review your work, then you would be more than happy to provide them with an opportunity after you have finished.
That's consise, polite, and reasonable.
