You have several options.
Lough Derg, Killaloe/Ballina. Less than 1 hour drive from Limerick.
Bunratty Castle, 15 minutes drive.
Ennis Town, 30 minutes drive
The Burren, Cliffs of Moher, 1.5 hour drive.

I recently asked a similar question and was answered that Bunratty Castle is worth a trip from Limerick. I have actually been there before - about 200 years ago. It is a big castle in a folk park where you can visit lots of little cottages and see how people lived in the 19th century. They also do mediaeval banquets, I believe, in case you are into that sort of entertainment.
The castle itself is very well restored and provides a great insight into life in a towerhouse stronghold...

Supposing you have a car? Then do the Clare Glens. Trust me the Clare Glens are in Limerick County! Go out by Annacotty to Newport. Follow that by going to Glenstal Abbey. Then if you are really brave find the road from Rear Cross across the mountains to Silvermine. Mind-Blowing! AND it keeps you away from Adare which as the other adviser says is over-priced over-hyped crap
