Maybe they require experience. It's hard to have 10 years of experience when you are 19.

While perhaps an unfair assumption, many fine dining restaurants feel that young people cannot devote the necessary mental energy or devotion to the sort of job that a fine dining restaurant demands. their thinking may be that a person who has to depend on the money they make from the job is more devoted than someone who does it on the side while they get their diploma or degree, and can ask mommy and daddy for financial help if money gets too tight.
It isn't always fair, but it is usually the thinking in place.

Because they will spill the soup or the caviar over $100,000s worth of clothes and restaurants would have to pay for that !:-)
Or maybe they don't want body-piercing, tatoos, thongs showing, .....just a random thought !:-)

Because some young people are immature and dont know how to adapt to an upper class environment which is okay because everyone is differernt
