I used to work as a Medical Assistant and phlebotomy is used all the time- whether in a private doctor's office, an insurance company lab (where people go for their annual physicals) or places like hospices and hospitals (where blood is drawn 1 or more times a day on some patients). Even cancer treatment centers use those skilled in phlebotomy. If you're skilled at drawing blood, there are definitely options available to you- you have only to choose where you want to use your newly acquired talents!! I wish you all the best! if you are the kind of person who doesn't like to stay in one spot, you could go around to nursing homes taking blood. or maybe going to home-bound people to get there blood, plus maybe give them a few minutes of much needed company.
